Nourish: Cranberry flax pumpkin bread
Tracy De Leon, MDS, RD, LD, showed us how to make this delicious cranberry flax pumpkin bread from our Nourish Series. Pumpkin is full of beta-carotene, cranberries have a high potency of anthocyanin phytochemicals and flaxseeds posses protective omega-3 fats. Here's what you'll need:
- Canola oil spray
- 1/2 cup whole-wheat pastry flour
- 1/2 cup unbleached all-purpose flour
- 1/2 cup ground flaxseed
- 2/3 cup packed light brown sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 large eggs
- 1 cup canned pumpkin
- 1/4 cup canola oil
- 1/2 cup unsweetened applesauce
- 1/4 cup 100 percent apple juice
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1 cup dried cranberries
