Nourish: Almond-crusted, baked chicken tenders
Taryn Prado, MDS, RD, LD, walked us through this delicious recipe from our Nourish Series: almond-crusted, baked chicken tenders. Here is what you'll need to recreate this healthy alternative to traditional fried tenders:
Chicken Tenders:
- 1 1/4 cup almonds
- 1 tsp. garlic powder
- 1 tsp. smoked paprika
- 1 tsp. dried mustard
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 eggs beaten
- 2 lbs. thin-sliced chicken breast halves (cut in half) or chicken tenders
Greek Yogurt Ranch Dip:
- 1 cup nonfat Greek yogurt
- 1/3 cup cup buttermilk
- 1 Tbsp. dried parsley
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1/8 tsp. cayenne pepper
- 1/8 tsp. ground black pepper
- 1/2 tsp. salt
- 1 tsp. Dijon mustard
- 1 tsp. lemon juice
- 1 Tbsp. fresh chives, finely chopped
- Fresh chives for garnish
