Nourish: Chickpea tacos perfect for a plant-based diet

Ripsi Arora, MS, RD, LD, showed us how to make chickpea tacos during a live cooking demo for our Nourish Series. Learn how she put together this delicious vegetarian meal that only takes 30 minutes to make with canned chickpeas. Here's what you'll need:
- 1 cup dried chickpea or no salt added canned chickpeas.
- 1 medium tomato (Chopped)
- 1-2” ginger (Chopped)
- 1 tbsp cooking oil of your choice
- 1 tsp. salt
- 1 tsp. red pepper
- 1 tsp. cumin
- 1/2 tsp. turmeric
- 1 tsp. cilantro powder
- 1 tsp. chana masala (optional)
- 1/4 cup fresh cilantro (for garnish)
- Whole wheat roti or tortilla
Ingredients for drizzle:
- 1 cup cilantro
- 1/4 medium onion
- 1/2 medium tomato
- 2 cloves of garlic
- 1 tsp. salt
- Green chili or jalapeño (optional)
- 1 cup whole milk yogurt
